Ingredients:
2 pounds lean ground beef
3-4 medium onions -- chop in food processor
4-5 cloves of garlic - chop in food processor (or use minced garlic from jar)
1 green pepper -- chop in food processor (may use red or other varieties)
3-6 jalapeno peppers - chop in food processor (wash hands thoroughly after handling)
2-4 stalks celery, diced
1 large can tomato sauce or 2 small
3 small cans good quality diced tomatoes
1 large can dark red kidney beans or 2 small
2 tablespoons chili powder plus 1/2 pack prepared chili powder mix
1 teaspoon salt
1 teaspoon pepper
3-6 drops hot sauce -- Texas Pete or similar
Directions:
In a large stock pan brown ground beef, onion, peppers, and celery. Drain all through a large colander. Return to stock pan and add remaining ingredients. Simmer until ready to serve
Spoon chili into individual bowls -- top with shredded sharp cheddar cheese, sour cream, and chopped red or spring onions. Great!
