Celery Seed Dressing

Elaine A. gave me this recipe when I lived in Florida.  It is used over cole slaw.  You can get a head of cabbage and grate your own slaw but, to make life a lot easier, I just go to the grocery store to the area where pre-packaged salad is located and pick up the cole slaw bag.  It's beautiful and you don't have to worry with that extra step.  All you do is make this great dressing!  No more nasty cuts on the grater!

Ingredients:
1/2 cup sugar
1 teaspoon dried mustard
1 teaspoon salt
1 tablespoon grated onion
1 teaspoon celery seed
4 1/2 tablespoons cider vinegar
1 cup canola oil

Directions:
Use about 1/2 cup of dressing to 3 cups of slaw -- just judge.  You want the dressing to "coat" the slaw.

Mix 1/2 cup sugar and 1 cup oil together in a small bowl -- stick in microwave for about 20 seconds or long enough to melt sugar.  Be careful, as this gets very hot if left in too long.  If sugar is not melted, return back to microwave and microwave in small intervals -- take out and stir and return until melted as much as possible.

Combine remaining ingredients together and add to oil/sugar.  Store in an airtight container in frig.

Keeps for quite a while
