Spinach Dip
This recipe is actually a Knorr's recipe -- from their vegetable dip package. It's delicious and is a big hit when entertaining. I used to make this a lot in Round Hill. I know you remember how good it is!
Ingredients:
1 16 ounce container of sour cream
11/2 up mayonnaise
1 can water chestnuts
1 package frozen spinach
green onions (or one small yellow onion) to taste
Directions:
Thaw and drain spinach in a colander. I have also placed spinach between paper towels and squeezed -- it actually works! Just make sure you have as much water drained from spinach as possible. Chop water chestnuts and onion finely. Mix all ingredients thoroughly and chill well before serving. You can serve in a bread bowl or on a platter with crackers.
