Potato Salad

This is Deb's recipe -- she served it to Dad and I one evening while we were visiting.  Simply amazing is the only way to describe it!

Ingredients for salad:
1 1/2 pounds red skin potatoes
1 cup sliced radishes
1/2 cup sliced scallions
2 tablespoons fresh dill (or to taste)

Ingredients for dressing:
3/4 cup mayonaise
2 tablespoons dijon mustard
1 teaspoon horseradish (optional)
1 scant teaspoon salt
1/4 + teaspoon cracked pepper

Directions:
Cut potatoes into a one-inch or slightly smaller dice, boil in lightly salted water until tender; drain and blanch.  When they are cool, drain well.  In a large bowl, combine potatoes, radishes, scallions, and dill.  Combine dressing ingredients and fold into the potatoes.  Yum!
