Ingredients:

2 cups sugar
2 cups flour
2 teaspoons baking powder
pinch of salt
3 tablespoons coconut oil melted in 1 cup milk
2 teaspoons vanilla
Directions:
Cream eggs and sugar together well -- beat on medium speed about 3 minutes. Mix together dry ingredients and add to egg and sugar mixture. In microwave, heat milk and shortening until shortening melts. Pour hot milk mixture into above ingredients. Fold in by hand. Add vanilla.
Bake 350 degrees for 25 minutes or until wooden pick comes out clean.
Note: I always bake in a sheet cake form. Much easier to serve and store. Grease and flour a 9 x 13 x 2 sheet cake pan. This cake can also be baked in a bundt pan -- make sure to always grease and flour pans well before adding batter. Once cooled, store in an air-tight container. Cake dries out very quickly.
